Description

A comforting dish combining tender zucchini with a rich, cheesy filling and savory marinara sauce.


Ingredients

  • 4 medium zucchinis, thinly sliced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips with a mandoline or sharp knife.
  3. Sprinkle zucchini slices with salt and let sit for 10 minutes, then pat dry.
  4. In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and pepper until smooth.
  5. Spread some marinara sauce at the bottom of a baking dish.
  6. Spoon cheese mixture onto one end of a zucchini slice, roll it up, and place seam side down in the dish.
  7. Pour remaining marinara sauce over the rolled zucchini. Add more mozzarella on top if desired.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until golden and bubbly.
  9. Garnish with fresh basil before serving.

Notes

Pat zucchini slices dry thoroughly to avoid a watery filling. You can prepare ahead and refrigerate before baking.
