A comforting dish combining tender zucchini with a rich, cheesy filling and savory marinara sauce.
Ingredients
- 4 medium zucchinis, thinly sliced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 egg
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips with a mandoline or sharp knife.
- Sprinkle zucchini slices with salt and let sit for 10 minutes, then pat dry.
- In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and pepper until smooth.
- Spread some marinara sauce at the bottom of a baking dish.
- Spoon cheese mixture onto one end of a zucchini slice, roll it up, and place seam side down in the dish.
- Pour remaining marinara sauce over the rolled zucchini. Add more mozzarella on top if desired.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until golden and bubbly.
- Garnish with fresh basil before serving.
Notes
Pat zucchini slices dry thoroughly to avoid a watery filling. You can prepare ahead and refrigerate before baking.
