Description

Delicious and versatile zucchini patties made with grated zucchini, herbs, and cheese. They can be pan-fried, baked, or air-fried—great as a snack, appetizer, or meatless main.


Ingredients

  • 2 medium zucchini, grated and salted
  • 2 eggs
  • 1/2 cup all-purpose flour (or almond flour for keto)
  • 1/4 cup grated onion
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan or feta cheese
  • 2 tablespoons chopped fresh parsley or dill
  • Salt and pepper to taste
  • Olive oil for pan-frying (optional)

Instructions

  1. Prep the zucchini: Grate the zucchini and place it in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Squeeze out excess water using cheesecloth or paper towels until dry.
  3. Make the mixture: In a bowl, mix the zucchini, eggs, flour, onion, garlic, cheese, herbs, salt, and pepper until combined.
  4. Form the patties: Shape into patties using your hands or a scoop.
  5. Choose a cooking method:
    • Pan-fry: Heat olive oil in a skillet, cook patties 3–4 minutes per side until golden brown.
    • Bake: Place on a baking sheet, bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
    • Air-fry: Air fry at 375°F (190°C) for 10–12 minutes, flipping once.

Notes

Serve with yogurt sauce or tzatziki. For a vegan version, use flax eggs and vegan cheese.
