- 2 medium zucchinis, grated
- 1/4 cup onion, finely chopped
- 2 eggs
- 1/4 cup all-purpose flour (or almond flour for low-carb)
- 1/4 cup grated Parmesan (optional)
- Salt and pepper to taste
- Olive oil or avocado oil for frying
- Optional Add-ins: Chopped herbs (parsley, dill, basil), crumbled feta or cheddar, minced garlic or scallions, chili flakes
Instructions
- Prep zucchini: Grate the zucchini and squeeze out as much moisture as possible using a clean towel or cheesecloth.
- Mix: In a large bowl, combine the grated zucchini, chopped onion, eggs, flour, Parmesan (if using), salt, and pepper. Mix well.
- Heat oil: Heat olive or avocado oil in a skillet over medium heat.
- Cook fritters: Drop spoonfuls of the mixture into the skillet, flatten gently. Cook for 3–4 minutes per side until golden brown and crispy.
- Drain and serve: Transfer fritters to a paper towel-lined plate. Serve hot, optionally with sour cream, tzatziki, or Greek yogurt.
Notes
To keep fritters crispy, serve immediately. You can also keep them warm in a low oven. Great for meal prep — reheat in an air fryer or oven.
