Description
A quick and healthy zucchini noodle dish that’s full of flavor and easy to make.
Ingredients
- 2 medium zucchinis, spiralized
- 1 bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese (optional) for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 1 minute until fragrant.
- Toss in bell pepper and cherry tomatoes; cook for about 5 minutes until softened.
- Stir in spiralized zucchini and spinach; cook until zucchini is tender but slightly crunchy, about 3-4 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese if desired.
