Description

A quick and easy zucchini noodle stir-fry that’s light, flavorful, and virtually idiot-proof.


Ingredients

  • 2 medium zucchinis, spiralized
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and ginger to the pan and sauté for 1 minute.
  3. Toss in the bell pepper, carrot, and broccoli. Stir-fry for 5 minutes.
  4. Add the zucchini noodles and soy sauce, and toss to combine.
  5. Cook for an additional 3-4 minutes until zucchini is tender.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For best results, do not overcook the zucchini to avoid mushiness.
