Description
A quick and easy zucchini noodle stir-fry that’s light, flavorful, and virtually idiot-proof.
Ingredients
- 2 medium zucchinis, spiralized
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and ginger to the pan and sauté for 1 minute.
- Toss in the bell pepper, carrot, and broccoli. Stir-fry for 5 minutes.
- Add the zucchini noodles and soy sauce, and toss to combine.
- Cook for an additional 3-4 minutes until zucchini is tender.
- Season with salt and pepper to taste. Serve hot.
Notes
For best results, do not overcook the zucchini to avoid mushiness.
