Ingredients

  • 2 medium zucchinis, spiralized
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound chicken breast, sliced
  • 1 cup cauliflower florets
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Spiralize the zucchinis to create noodle-like strands.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté until fragrant, approximately 1 minute.
  4. Cook sliced chicken in the skillet until no longer pink, about 5-7 minutes.
  5. Steam cauliflower florets in a pot with simmering water until soft, roughly 5-7 minutes.
  6. Blend steamed cauliflower with chicken broth until smooth.
  7. Stir the blended sauce into the chicken, adding Parmesan cheese and seasoning with salt and pepper.
  8. Add spiralized zucchini noodles to the skillet and toss gently for 2-3 minutes.
  9. Serve warm and enjoy!
