Ingredients
- 2 medium zucchinis, spiralized
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 pound chicken breast, sliced
- 1 cup cauliflower florets
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Spiralize the zucchinis to create noodle-like strands.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, approximately 1 minute.
- Cook sliced chicken in the skillet until no longer pink, about 5-7 minutes.
- Steam cauliflower florets in a pot with simmering water until soft, roughly 5-7 minutes.
- Blend steamed cauliflower with chicken broth until smooth.
- Stir the blended sauce into the chicken, adding Parmesan cheese and seasoning with salt and pepper.
- Add spiralized zucchini noodles to the skillet and toss gently for 2-3 minutes.
- Serve warm and enjoy!
