Ingredients
- 2 medium zucchini, shredded
- 1 cup shredded mozzarella cheese
- 2 oz cream cheese
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp garlic powder (optional)
- 2 large eggs
- Everything bagel seasoning (for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Wrap shredded zucchini in a kitchen towel and squeeze out moisture.
- In a microwave-safe bowl, melt mozzarella and cream cheese in 30-second intervals until smooth.
- In a large bowl, mix almond flour, coconut flour, baking powder, salt, and garlic powder.
- Add the cheese mixture to the bowl and stir in the squeezed zucchini and one egg.
- Divide the dough into six portions, roll each into a rope, and shape into bagels.
- Brush each bagel with beaten egg and sprinkle everything bagel seasoning on top.
- Bake for 15-18 minutes until golden brown.
- Let cool and then slice to serve.

To keep bagels fresh, store in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months.
