Delicious low-carb zucchini bagels that offer a guilt-free alternative to traditional bagels. Perfect for keto diets and easy to customize with various toppings.


Ingredients

  • 2 medium zucchini, shredded
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional)
  • 2 large eggs
  • Everything bagel seasoning (for topping)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Wrap shredded zucchini in a kitchen towel and squeeze out moisture.
  4. In a microwave-safe bowl, melt mozzarella and cream cheese in 30-second intervals until smooth.
  5. In a large bowl, mix almond flour, coconut flour, baking powder, salt, and garlic powder.
  6. Add the cheese mixture to the bowl and stir in the squeezed zucchini and one egg.
  7. Divide the dough into six portions, roll each into a rope, and shape into bagels.
  8. Brush each bagel with beaten egg and sprinkle everything bagel seasoning on top.
  9. Bake for 15-18 minutes until golden brown.
  10. Let cool and then slice to serve.
