Ingredients
- 1 cup unsalted butter, melted
- 1 cup brown sugar
- 2/3 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh strawberries, hulled and chopped
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, combine melted butter, brown sugar, and granulated sugar until smooth.
- Add in the eggs and vanilla extract, mixing well until fully incorporated.
- In another bowl, whisk together flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the chopped strawberries, lemon zest, and lemon juice.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Let it cool completely in the pan before slicing into bars. Dust with powdered sugar before serving if desired.
Notes
These blondies get better with time and can be made ahead of time. Store in an airtight container for up to five days.
