Description

Juicy, tangy meatballs cooked in a bright lemon sauce, perfect for a quick dinner that feels gourmet.


Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 egg
  • 1 cup chicken broth
  • Juice of 2 lemons
  • 2 tbsp olive oil
  • 1 tsp cornstarch (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together ground meat, breadcrumbs, Parmesan, parsley, garlic, oregano, salt, pepper, and egg until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20-25 minutes or until cooked through.
  5. In a saucepan, heat olive oil over medium heat.
  6. Add chicken broth and lemon juice, bringing to a simmer.
  7. If desired, whisk in cornstarch to thicken the sauce.
  8. Once meatballs are cooked, add them to the lemon sauce, coating well.
  9. Serve hot with a side of rice or salad.
