Ingredients
- 1 lb ground beef or lamb
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 egg
- 1 cup chicken broth
- Juice of 2 lemons
- 2 tbsp olive oil
- 1 tsp cornstarch (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together ground meat, breadcrumbs, Parmesan, parsley, garlic, oregano, salt, pepper, and egg until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet and bake for 20-25 minutes or until cooked through.
- In a saucepan, heat olive oil over medium heat.
- Add chicken broth and lemon juice, bringing to a simmer.
- If desired, whisk in cornstarch to thicken the sauce.
- Once meatballs are cooked, add them to the lemon sauce, coating well.
- Serve hot with a side of rice or salad.
