A delicious and easy dish featuring tender pork marinated in zesty ginger and lime served over creamy coconut rice.
Ingredients
- Pork, any cut (pork chops, tenderloin)
- Fresh ginger, minced
- Garlic, minced
- Lime juice
- Soy sauce
- Honey
- Salt
- Coconut milk
- Rice
- Fresh cilantro
Instructions
- In a bowl, mix minced ginger, garlic, lime juice, soy sauce, honey, and salt to create the marinade. Add the pork and marinate for at least 30 minutes.
- Rinse the rice under cold water until clear. In a pot, combine rice, coconut milk, and a pinch of salt. Cook according to package instructions.
- Grill or sear the marinated pork in a hot pan until cooked through, achieving caramelization on the outside.
- Serve the pork over the creamy coconut rice and garnish with fresh cilantro.
Notes
For a spicier version, add red pepper flakes or jalapeños to the marinade. Substitute chicken or tofu if preferred.
