Ingredients

  • Pork, any cut (pork chops, tenderloin)
  • Fresh ginger, minced
  • Garlic, minced
  • Lime juice
  • Soy sauce
  • Honey
  • Salt
  • Coconut milk
  • Rice
  • Fresh cilantro


Instructions

  1. In a bowl, mix minced ginger, garlic, lime juice, soy sauce, honey, and salt to create the marinade. Add the pork and marinate for at least 30 minutes.
  2. Rinse the rice under cold water until clear. In a pot, combine rice, coconut milk, and a pinch of salt. Cook according to package instructions.
  3. Grill or sear the marinated pork in a hot pan until cooked through, achieving caramelization on the outside.
  4. Serve the pork over the creamy coconut rice and garnish with fresh cilantro.

Notes

For a spicier version, add red pepper flakes or jalapeños to the marinade. Substitute chicken or tofu if preferred.
