Description

A bright and flavorful chicken dish combining tangy lime and rich coconut for a quick and easy weeknight meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. In a bowl, whisk together coconut milk, lime juice, lime zest, garlic, ginger, soy sauce, honey, salt, and pepper.
  2. Place chicken breasts in a zip-top bag and pour marinade over them. Seal the bag and marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat grill to medium-high heat.
  4. Remove chicken from marinade and grill each side for about 6-7 minutes, or until cooked through.
  5. Garnish with chopped cilantro before serving.

Notes

Marinating overnight deepens flavor, but even 1 hour will work. Be sure to preheat the grill for the best results.
