Description
A bright and flavorful chicken dish combining tangy lime and rich coconut for a quick and easy weeknight meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- Juice of 2 limes
- Zest of 1 lime
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon honey
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a bowl, whisk together coconut milk, lime juice, lime zest, garlic, ginger, soy sauce, honey, salt, and pepper.
- Place chicken breasts in a zip-top bag and pour marinade over them. Seal the bag and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and grill each side for about 6-7 minutes, or until cooked through.
- Garnish with chopped cilantro before serving.
Notes
Marinating overnight deepens flavor, but even 1 hour will work. Be sure to preheat the grill for the best results.
