Ingredients
- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (aluminum-free preferred)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- Optional: ½ cup finely ground almond flour
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it well.
- In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
- Add the baking powder, salt, and xanthan gum or psyllium husk powder. If using almond flour, stir it in now.
- Pour the batter into the prepared loaf pan, smoothing the top evenly.
- Bake for 35–45 minutes until golden brown and a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, allow the bread to cool completely before slicing to prevent crumbling.
