Description

A cozy and cheesy winter vegetable casserole that’s easy to make and perfect for potlucks.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups carrots, sliced
  • 1 cup bell peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated cheese (cheddar or your choice)
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil, for sautéing
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent.
  3. Add the broccoli, cauliflower, and carrots to the skillet. Cook until slightly tender.
  4. Layer the sautéed vegetables in a greased baking dish. Add diced bell peppers on top.
  5. Pour the heavy cream over the layered vegetables and season with salt and pepper.
  6. Sprinkle the grated cheese evenly over the top.
  7. Top with breadcrumbs for a crunchy texture.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the vegetables are tender.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh herbs if desired. Serve warm.

Notes

For a lighter option, substitute heavy cream with half-and-half. You can also use frozen vegetables if fresh are not available.
