Description

A cozy one-pot white chicken chili loaded with chicken, beans, corn, and a zing of lime that’s perfect for a comforting meal.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained (great Northern or cannellini)
  • 1 cup corn, frozen or fresh
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Juice of 2 limes
  • Salt and pepper to taste


Instructions

  1. Sauté the onion and garlic in a pot over medium heat until the onion is soft and translucent.
  2. Add the shredded chicken, white beans, corn, and chicken broth to the pot and stir well.
  3. Stir in cumin, chili powder, salt, and pepper. Mix thoroughly.
  4. Simmer for 20 minutes.
  5. Squeeze lime juice in before serving and stir well.

Notes
