Description
Warm and comforting white chicken chili with sweet potatoes, packed with flavor and easy to make.
Ingredients
- 1 lb boneless chicken breast
- 2 medium sweet potatoes, diced
- 1 can white beans, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup corn, frozen or fresh
- 1/4 cup cilantro, chopped
Instructions
- Sauté the onion and garlic until soft and fragrant.
- Add the diced sweet potatoes and cook for about 5 minutes.
- Add the boneless chicken breast and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Mix in white beans, corn, cumin, chili powder, salt, and pepper.
- Simmer for 20-25 minutes until sweet potatoes are tender.
- Shred the cooked chicken and return to the pot.
- Add cilantro just before serving.
Notes
This recipe is flexible; you can substitute chicken with mushrooms for a vegetarian option.
