A cozy, creamy bowl of white chicken chili rice that’s quick to prepare and packed with flavor. Perfect for a lazy day meal.
Ingredients
- 2 cups cooked white rice
- 2 cups shredded cooked chicken
- 1 can white beans, drained and rinsed
- 1 can diced green chilies
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Heat the olive oil in a medium pot over medium heat.
- Add the shredded chicken, white beans, diced green chilies, and chicken broth to the pot.
- Stir in the cumin, garlic powder, onion powder, salt, and pepper.
- Allow to simmer for about 15 minutes.
- Spoon the mixture over the cooked white rice.
- Garnish with chopped cilantro before serving.
