Description

A cozy, creamy bowl of white chicken chili rice that’s quick to prepare and packed with flavor. Perfect for a lazy day meal.


Ingredients

  • 2 cups cooked white rice
  • 2 cups shredded cooked chicken
  • 1 can white beans, drained and rinsed
  • 1 can diced green chilies
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the shredded chicken, white beans, diced green chilies, and chicken broth to the pot.
  3. Stir in the cumin, garlic powder, onion powder, salt, and pepper.
  4. Allow to simmer for about 15 minutes.
  5. Spoon the mixture over the cooked white rice.
  6. Garnish with chopped cilantro before serving.
