Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup white beans, rinsed and drained
  • 1 cup corn
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 flour tortillas


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the onion and garlic, sauté until soft.
  4. Stir in the chicken, beans, corn, sour cream, cumin, and chili powder.
  5. Fill the tortillas with the mixture and roll them up tightly.
  6. Place the enchiladas in a baking dish, pour chicken broth over them, and top with cheese.
  7. Bake for 25 minutes until the cheese is melted and bubbly.
