Ingredients
- 2 cups shredded cooked chicken
- 1 cup white beans, rinsed and drained
- 1 cup corn
- 1 cup sour cream
- 1 cup shredded cheese
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 flour tortillas
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until soft.
- Stir in the chicken, beans, corn, sour cream, cumin, and chili powder.
- Fill the tortillas with the mixture and roll them up tightly.
- Place the enchiladas in a baking dish, pour chicken broth over them, and top with cheese.
- Bake for 25 minutes until the cheese is melted and bubbly.
