Ingredients
- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup chicken broth
- 1 package (8 oz) cream cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup corn
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the shredded chicken, white beans, diced tomatoes, chicken broth, corn, cumin, chili powder, salt, and pepper. Stir to combine.
- Bring to a simmer and cook for 20 minutes.
- Stir in the cream cheese until melted and creamy.
- Serve hot, garnished with fresh cilantro.
