Description
A refreshing and healthy dessert made with frozen watermelon and coconut milk.
Ingredients
- 4 cups cubed frozen watermelon
- 1/2 cup coconut milk
- 1 lime, juiced (optional)
- 1-2 tbsp honey or sweetener (optional)
Instructions
- Begin by cubing a seedless watermelon. Spread the cubes in a single layer on a lined baking tray.
- Place the tray in the freezer and let the watermelon freeze for a few hours or overnight.
- Once the watermelon is fully frozen, add the cubes to a food processor. Pour in the coconut milk.
- If desired, add honey or sweetener and lime juice at this time.
- Blend on high speed, scraping down the sides occasionally, until you achieve a smooth consistency, about 5-6 minutes.
- Enjoy your sorbet immediately, or store it in a freezer-safe container to thaw before serving.
Notes
Use only seedless watermelon for a smoother texture. For a creamier sorbet, adjust the amount of coconut milk. Feel free to experiment with different sweeteners.
