Description
This refreshing summer salad features juicy watermelon, crisp cucumber, fresh herbs, and creamy feta, all brought together with a sweet and tangy honey-lime dressing. Perfect as a side dish or light appetizer.
Ingredients
Scale
- 4 cups cubed watermelon
- 1 English cucumber (or 2 small Persian cucumbers), sliced
- ½ cup feta cheese, crumbled (preferably block feta in brine)
- 15 fresh mint leaves, chopped
- 10–15 basil leaves, torn
- For the Honey-Lime Dressing:
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- Pinch of kosher salt
Instructions
- Prepare the Produce: Cut the watermelon into bite-sized cubes. Slice the cucumber. Chop the mint and tear the basil leaves.
- Make the Dressing: In a small bowl, whisk together honey, lime juice, olive oil, and a pinch of salt.
- Assemble the Salad: In a large bowl, combine watermelon, cucumber, mint, and basil. Drizzle the dressing evenly over the top.
- Toss Gently: Toss the ingredients carefully to combine, being cautious not to break the watermelon cubes.
- Finish and Serve: Sprinkle crumbled feta cheese over the salad. Serve immediately for the freshest texture and flavor.
Notes
For best results, use cold, seedless watermelon and block feta in brine. You can add arugula or toasted nuts for extra complexity. Serve within 30 minutes of tossing for optimal texture.
