- 1/3 cup crumbled feta cheese
- 1 avocado, cubed (optional)

- 1/2 jalapeño or serrano pepper, thinly sliced (optional)
- For the Dressing:
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons fresh lime juice
- 1/2 garlic clove, minced
- 1/4 teaspoon sea salt (plus more to taste)
Instructions
- Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, minced garlic, and salt.
- Assemble the Salad: On a large plate or platter, layer the watermelon, cucumber, and red onion.
- Drizzle with half the dressing.
- Top with feta cheese, avocado (if using), mint or basil, and jalapeño slices.
- Drizzle with the remaining dressing.
- Serve: Sprinkle with additional sea salt to taste and serve immediately for best texture and flavor.
Notes
For best results, use chilled ingredients and serve within 30 minutes of assembly. Swap herbs (mint or basil) depending on your preference. Add arugula or a handful of pistachios for extra texture.
