Description

A warm and filling salad featuring roasted sweet potatoes and black beans, perfectly balanced with fresh lime and cilantro.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, cumin, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine black beans, red bell pepper, red onion, and cilantro.
  5. Add the roasted sweet potatoes to the bowl.
  6. Drizzle with lime juice and toss to combine.
  7. Serve warm or at room temperature.

Notes

For best flavor, add lime juice just before serving and consider toasting the cumin before adding for enhanced aroma.
