Description

A comforting twist on classic walking tacos, this casserole is packed with flavor and perfect for gatherings.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 2 cups Fritos
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Sour cream for garnish
  • Chopped green onions for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat for 5-7 minutes. Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, corn, and black beans. Cook for an additional 5 minutes.
  4. In a large baking dish, layer half of the Fritos, followed by the beef mixture, half of the cheese, and then the diced bell peppers and onions.
  5. Repeat the layering with the remaining Fritos, beef mixture, cheese, and any leftover peppers and onions.
  6. Bake for 20-25 minutes until the cheese is golden and bubbly.
  7. Serve hot, garnished with sour cream and chopped green onions.
