A comforting twist on classic walking tacos, this casserole is packed with flavor and perfect for gatherings.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 2 cups Fritos
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers
- 1 cup diced onions
- Sour cream for garnish
- Chopped green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat for 5-7 minutes. Drain excess fat.
- Stir in taco seasoning, diced tomatoes, corn, and black beans. Cook for an additional 5 minutes.
- In a large baking dish, layer half of the Fritos, followed by the beef mixture, half of the cheese, and then the diced bell peppers and onions.
- Repeat the layering with the remaining Fritos, beef mixture, cheese, and any leftover peppers and onions.
- Bake for 20-25 minutes until the cheese is golden and bubbly.
- Serve hot, garnished with sour cream and chopped green onions.
