Description

A comforting twist on the classic walking taco, this casserole is packed with flavor and ideal for gatherings.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 2 cups Fritos
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Sour cream, for serving
  • Chopped green onions, for garnish


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat for 5-7 minutes; drain excess fat.
  3. Add taco seasoning, diced tomatoes, corn, and black beans; cook for an additional 5 minutes.
  4. In a large baking dish, layer half of the Fritos, the beef mixture, half of the cheese, bell peppers, and onions.
  5. Repeat layers with remaining Fritos, beef mixture, and cheese; top with leftover peppers and onions.
  6. Bake for 20-25 minutes until cheese is golden and bubbly.
  7. Serve hot, garnished with sour cream and chopped green onions.
