Description
A hearty and comforting beef stew perfect for chilly days, made with simple ingredients and cooked in one pot.
Ingredients
- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef cubes and brown on all sides.
- Remove beef and set aside.
- In the same pot, add onion and garlic, and sauté until softened.
- Stir in the tomato paste and cook for 1 minute.
- Return the beef to the pot, add beef broth, carrots, potatoes, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for about 120 minutes or until the beef is tender.
- Serve hot and enjoy the delicious gravy!
Notes
For extra flavor, let the beef brown nicely in the pan. Feel free to add more vegetables, like peas or celery. For a thicker stew, add a bit of cornstarch mixed with water towards the end of cooking.
