Description

A hearty and comforting beef stew perfect for chilly days, made with simple ingredients and cooked in one pot.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. In the same pot, add onion and garlic, and sauté until softened.
  5. Stir in the tomato paste and cook for 1 minute.
  6. Return the beef to the pot, add beef broth, carrots, potatoes, Worcestershire sauce, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat to low and cover.
  8. Simmer for about 120 minutes or until the beef is tender.
  9. Serve hot and enjoy the delicious gravy!

Notes

For extra flavor, let the beef brown nicely in the pan. Feel free to add more vegetables, like peas or celery. For a thicker stew, add a bit of cornstarch mixed with water towards the end of cooking.
