Ingredients
- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 lime, juiced
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 cup corn
- 1/2 cup black beans, drained and rinsed
- 1/2 cup cilantro, chopped
- Protein of your choice (shrimp, chicken, tofu, etc.)
- Salt and pepper to taste
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and water is absorbed.
- Once cooked, remove from heat and let it sit covered for 10 minutes. Fluff with a fork and mix in the rice vinegar and lime juice.
- Prepare the veggies: Slice the avocado and chop the tomatoes, cucumber, bell pepper, and cilantro.
- In a bowl, start layering the rice on the bottom followed by your protein choice and then arrange the veggies beautifully on top.
- Drizzle with extra lime juice, season with salt and pepper, and garnish with cilantro.
- Serve immediately and enjoy your vibrant, flavorful poke bowl.
Notes
Keep rice warm and fluffy for best results. Taste as you go and adjust seasoning with salt and acid.
