Description

A colorful and easy poke bowl that can be customized with your choice of protein and vegetables, perfect for a quick and nutritious meal.


Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/2 cup corn
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup cilantro, chopped
  • Protein of your choice (shrimp, chicken, tofu, etc.)
  • Salt and pepper to taste


Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and water is absorbed.
  2. Once cooked, remove from heat and let it sit covered for 10 minutes. Fluff with a fork and mix in the rice vinegar and lime juice.
  3. Prepare the veggies: Slice the avocado and chop the tomatoes, cucumber, bell pepper, and cilantro.
  4. In a bowl, start layering the rice on the bottom followed by your protein choice and then arrange the veggies beautifully on top.
  5. Drizzle with extra lime juice, season with salt and pepper, and garnish with cilantro.
  6. Serve immediately and enjoy your vibrant, flavorful poke bowl.

Notes

Keep rice warm and fluffy for best results. Taste as you go and adjust seasoning with salt and acid.
