Description

A comforting Veggie Mac and Cheese packed with colorful veggies, perfect for a quick and delicious meal.


Ingredients

  • 8 oz elbow macaroni
  • 2 cups broccoli florets
  • 1 cup diced bell peppers
  • 1 cup shredded carrots
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook the macaroni according to the package instructions. Drain and set aside.
  2. In a pot, melt the butter over medium heat.
  3. Add the flour, garlic powder, salt, and pepper. Stir until smooth.
  4. Gradually whisk in the milk. Cook until thickened.
  5. Add the cheese and stir until melted.
  6. Add the broccoli, bell peppers, and carrots. Cook for 5 minutes.
  7. Combine the cheese sauce with macaroni. Mix well.
  8. Serve hot.
