Description

A vibrant and crunchy vegetarian pasta salad that’s easy to make and perfect for any occasion.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese. Toss gently.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper. Taste and adjust seasoning.
  4. Pour the dressing over the pasta salad and toss well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
