Description
A vibrant and customizable Vegetable Primavera filled with a rainbow of veggies that’s healthy and easy to prepare.
Ingredients
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 1 cup cherry tomatoes, halved
- 1 cup zucchini, sliced
- 1 cup carrots, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 1 minute.
- Add broccoli, bell peppers, and carrots. Cook for 5 minutes.
- Add zucchini and cherry tomatoes. Cook for an additional 5 minutes.
- Season with salt and pepper.
- Serve warm, topped with Parmesan cheese if desired.

Customize with any vegetables you have on hand. Great for using up leftovers.
