Description
A delicious and healthy vegan sweet potato banana bread made with ripe bananas, sweet potatoes, and a hint of chocolate.
Ingredients
- 2 medium-sized mashed bananas (extra spotty or brown)
- 1/2 cup mashed sweet potato
- 1/3 cup avocado oil (or any liquid oil)
- 1/3 cup maple syrup
- 1 1/2 cups spelt flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- In a bowl, combine all ingredients except for the chocolate chips. Mix until just combined.
- Fold the chocolate chips into the dough gently.
- Line a loaf pan with parchment paper. Pour the dough into the pan and bake for 45-55 minutes.
- Once baked, let the loaf cool for at least 20 minutes.
Notes
Store in an airtight container at room temperature for up to three days or in the refrigerator for a week. Freeze slices wrapped in plastic for up to three months.
