Instructions
- Prepare the zucchini: Grate the zucchini using a box grater. Sprinkle with a pinch of salt and let sit in a bowl or colander for 10 minutes. Then, using a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible.
- Make the batter: In a large bowl, mix the grated zucchini with eggs, flour, garlic, herbs, cheese (if using), salt, and pepper until well combined.
- Heat the pan: Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
- Form and fry: Scoop spoonfuls of batter and shape into small patties in the pan. Fry for 2–3 minutes per side until golden and crispy.
- Drain and serve: Transfer to a plate lined with paper towels to remove excess oil. Serve warm with your favorite dip (e.g., sour cream, tzatziki, or yogurt sauce).
