  • 1 lb boneless, skinless chicken thighs (or breasts)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley (optional, for garnish)

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken in a large skillet over medium heat for 5–6 minutes per side until browned.
  3. In a small bowl, mix together the BBQ sauce and honey. Pour over the chicken in the skillet and simmer for 2–3 minutes.
  4. Add the rice and chicken broth to the skillet. Stir to combine all ingredients evenly.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes.
  6. In the last 5 minutes of cooking, add the mixed vegetables on top without stirring. Cover again and continue cooking.
  7. Once the rice is tender and the liquid is absorbed, remove from heat.
  8. Garnish with chopped green onions or parsley and serve hot.

Notes

You can substitute chicken breasts for thighs. Adjust the sweetness by changing the honey-BBQ ratio. For a spicier kick, add chili flakes or hot sauce to the BBQ mix.
