A hearty and flavorful one-pan meal featuring seared chicken, sweet and smoky BBQ-honey sauce, tender rice, and colorful vegetables. Easy, comforting, and perfect for busy weeknights.

- 1 lb boneless, skinless chicken thighs (or breasts)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (frozen or fresh)
- Chopped green onions or parsley (optional, for garnish)
Instructions
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Sear the chicken in a large skillet over medium heat for 5–6 minutes per side until browned.
- In a small bowl, mix together the BBQ sauce and honey. Pour over the chicken in the skillet and simmer for 2–3 minutes.
- Add the rice and chicken broth to the skillet. Stir to combine all ingredients evenly.
- Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes.
- In the last 5 minutes of cooking, add the mixed vegetables on top without stirring. Cover again and continue cooking.
- Once the rice is tender and the liquid is absorbed, remove from heat.
- Garnish with chopped green onions or parsley and serve hot.
Notes
You can substitute chicken breasts for thighs. Adjust the sweetness by changing the honey-BBQ ratio. For a spicier kick, add chili flakes or hot sauce to the BBQ mix.
