Description
A warm and hearty Tuscany Soup packed with flavors from sausage, bacon, and kale, perfect for chilly evenings.
Ingredients
- 1 pound sausage
- 4 strips bacon
- 2 cups kale, chopped
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
- Add the sausage to the pot and cook until browned.
- Stir in the onion and garlic, cooking until softened.
- Add the potatoes and chicken broth, bring to a boil, and then reduce to a simmer.
- Cook until the potatoes are tender, about 15 minutes.
- Add kale and simmer for another 5 minutes.
- Stir in the heavy cream and season with salt, pepper, and red pepper flakes if desired.
- Serve warm, garnished with crumbled bacon.
Notes
For extra flavor, try using Italian sausage or adding herbs. Customize with more vegetables or make a vegetarian version by adding beans.
