Description

A warm and hearty Tuscany Soup packed with flavors from sausage, bacon, and kale, perfect for chilly evenings.


Ingredients

  • 1 pound sausage
  • 4 strips bacon
  • 2 cups kale, chopped
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
  2. Add the sausage to the pot and cook until browned.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the potatoes and chicken broth, bring to a boil, and then reduce to a simmer.
  5. Cook until the potatoes are tender, about 15 minutes.
  6. Add kale and simmer for another 5 minutes.
  7. Stir in the heavy cream and season with salt, pepper, and red pepper flakes if desired.
  8. Serve warm, garnished with crumbled bacon.

Notes

For extra flavor, try using Italian sausage or adding herbs. Customize with more vegetables or make a vegetarian version by adding beans.
