Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 tablespoon dried Italian herbs
  • 4 cups fresh spinach
  • Salt and pepper to taste


Instructions

  1. In a large pot, drizzle olive oil over medium heat.
  2. Add Italian sausage and cook for 5-7 minutes until browned.
  3. Stir in diced onion, carrots, celery, and minced garlic; sauté until vegetables are tender and onion is translucent, about 5-6 minutes.
  4. Pour in the broth and bring to a gentle simmer.
  5. Stir in the white beans and dried herbs, letting the flavors combine.
  6. Allow the soup to simmer for 10-15 minutes.
  7. Add fresh spinach and stir until wilted.
  8. Season with salt and pepper to taste before serving hot.

Notes

For a more brothy soup, add extra broth. To make it thicker, simmer longer. A splash of red wine vinegar can brighten flavors at serving.
