Ingredients
- 2 tablespoons olive oil
- 1 pound Italian sausage
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 tablespoon dried Italian herbs
- 4 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, drizzle olive oil over medium heat.
- Add Italian sausage and cook for 5-7 minutes until browned.
- Stir in diced onion, carrots, celery, and minced garlic; sauté until vegetables are tender and onion is translucent, about 5-6 minutes.
- Pour in the broth and bring to a gentle simmer.
- Stir in the white beans and dried herbs, letting the flavors combine.
- Allow the soup to simmer for 10-15 minutes.
- Add fresh spinach and stir until wilted.
- Season with salt and pepper to taste before serving hot.
Notes
For a more brothy soup, add extra broth. To make it thicker, simmer longer. A splash of red wine vinegar can brighten flavors at serving.
