Delicious and healthy turkey and spinach stuffed peppers that are easy to make and packed with nutrients.
Ingredients
- 4 bell peppers (any color)
- 1 pound ground turkey
- 2 cups fresh spinach, chopped
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a pan, cook the ground turkey until browned.
- Add spinach, cooked rice, diced tomatoes, garlic powder, onion powder, salt, and pepper. Mix well.
- Stuff each bell pepper with the turkey mixture.
- Place the stuffed peppers in a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until the peppers are tender.
Notes
Feel free to customize the filling with other ingredients like black beans or different vegetables.
