Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips (dark, milk, or a mix)
  • 1/2 cup pistachios, chopped


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Fold in the chocolate chips and chopped pistachios.
  6. Drop rounded tablespoons of cookie dough onto a lined baking sheet, leaving space between each.
  7. Bake for 10-12 minutes, or until cookies are set and edges are slightly golden.
  8. Allow to cool on the baking sheet for a few minutes, then transfer to wire racks to cool completely.

Notes

For softer cookies, reduce the baking time slightly or add more butter to the dough.
