Ingredients

  • 2 cups pasta (any shape)
  • 1 cup lentils (green or brown)
  • 2 cups diced tomatoes (fresh or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano


Instructions

  1. Cook pasta according to package instructions, salting the water.
  2. In a pan, heat olive oil over medium heat.
  3. Add chopped onion and garlic to the pan and sauté until translucent, about 3-5 minutes.
  4. Add lentils and diced tomatoes; stir together and let simmer.
  5. Season with salt, pepper, basil, and oregano; simmer for 20 minutes until lentils are tender.
  6. Combine cooked pasta with lentil mixture in the pan.
