Tomato Basil Vegetable Soup

Description

A warm, cozy, and delicious soup that’s simple to make and can be customized with whatever vegetables you have on hand.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • 2 cups fresh tomatoes, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup zucchini, diced
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic; sauté until softened.
  3. Pour in the vegetable broth and add the diced tomatoes.
  4. Toss in the carrots, celery, and zucchini. Bring to a boil.
  5. Stir in your dried basil, adding salt and pepper to taste.
  6. Reduce heat and let it simmer for about 20 minutes.
  7. Remove from heat and toss in fresh basil leaves.
  8. Serve hot in a bowl.
