Description
A warm, cozy, and delicious soup that’s simple to make and can be customized with whatever vegetables you have on hand.
Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14 ounces) diced tomatoes
- 2 cups fresh tomatoes, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup zucchini, diced
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic; sauté until softened.
- Pour in the vegetable broth and add the diced tomatoes.
- Toss in the carrots, celery, and zucchini. Bring to a boil.
- Stir in your dried basil, adding salt and pepper to taste.
- Reduce heat and let it simmer for about 20 minutes.
- Remove from heat and toss in fresh basil leaves.
- Serve hot in a bowl.
