Ingredients
- 2 cups canned chickpeas, drained and rinsed
- 4 cups diced tomatoes
- 1 cup vegetable broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic. Cook until onion is translucent.
- Add diced tomatoes and vegetable broth. Bring to a simmer.
- Add chickpeas and cook for 10 minutes.
- Stir in fresh basil and season with salt and pepper.
- Blend the soup for a smooth texture, if desired.
- Serve warm.
Notes
For a creamier soup, add a splash of coconut milk after blending. Adjust seasonings to taste before serving.
