A comforting and creamy curry infused with vibrant vegetables and hearty tofu, perfect for a cozy meal.
Ingredients
- 1 block firm tofu, cubed
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup carrots, sliced
- 1 can coconut milk (400ml)
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add cubed tofu and cook until golden brown.
- Stir in broccoli, bell peppers, and carrots.
- Add curry powder and mix well.
- Pour in coconut milk and bring to a simmer.
- Season with salt and pepper.
- Cook for 15 minutes until vegetables are tender.
- Serve warm.

Opt for extra firm tofu for best texture and feel free to swap out vegetables as desired.
