Description

Ingredients

  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)


Instructions

  1. Prepare the Cookie Dough: In a bowl, whisk together the flour, espresso powder, baking powder, baking soda, and salt. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. Combine Mixtures: Gradually mix the dry ingredients into the wet ingredients until a dough forms. Chill the dough for about 30 minutes.
  3. Bake Cookies: Preheat your oven to 180°C (350°F). Scoop out tablespoon-sized portions of dough and place them on a lined baking sheet. Bake for 10-12 minutes until just golden. Allow cooling on a rack.
  4. Make the Mascarpone Cream: In a bowl, beat the mascarpone, whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  5. Assemble the Cookies: Once cookies are cool, spread or pipe a generous layer of mascarpone cream between two cookies. Dust the tops with cocoa powder before serving.
