Delicious Three-Cheese Spinach Roll-Ups that combine ricotta, mozzarella, and parmesan with fresh spinach for a cheesy, easy-to-make dish.
Ingredients
- 2 cups fresh spinach
- 1/2 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 8 large tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the ricotta, mozzarella, parmesan, garlic powder, salt, and pepper until combined.
- Lay a tortilla flat on a clean surface.
- Spread a layer of the cheese mixture on the tortilla.
- Add a handful of fresh spinach on top.
- Roll the tortilla tightly and place it seam-side down in a baking dish.
- Repeat with the remaining tortillas and filling.
- Drizzle olive oil over the top of the roll-ups.
- Bake for about 20 minutes until heated through and slightly golden.
Notes
Make a big batch for leftovers. These roll-ups taste even better the next day.
