Description

Delicious Three-Cheese Spinach Roll-Ups that combine ricotta, mozzarella, and parmesan with fresh spinach for a cheesy, easy-to-make dish.


Ingredients

  • 2 cups fresh spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 8 large tortillas


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the ricotta, mozzarella, parmesan, garlic powder, salt, and pepper until combined.
  3. Lay a tortilla flat on a clean surface.
  4. Spread a layer of the cheese mixture on the tortilla.
  5. Add a handful of fresh spinach on top.
  6. Roll the tortilla tightly and place it seam-side down in a baking dish.
  7. Repeat with the remaining tortillas and filling.
  8. Drizzle olive oil over the top of the roll-ups.
  9. Bake for about 20 minutes until heated through and slightly golden.

Notes

Make a big batch for leftovers. These roll-ups taste even better the next day.
