Description
A hearty, cheesy vegetable casserole packed with zucchini, broccoli, and mushrooms. Made creamy with sour cream and cheddar cheese, it’s a satisfying vegetarian dish that’s perfect as a side or light main.

- 2 cups chopped zucchini
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- 2 eggs
- 1/2 cup sour cream
- 1/4 cup milk
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 casserole dish.
- Lightly sauté the onions and mushrooms in a skillet over medium heat until softened. Drain any excess moisture.
- In a large bowl, combine zucchini, broccoli, sautéed mushrooms and onions, shredded cheddar, eggs, sour cream, milk, garlic powder, salt, and pepper. Mix well.
- Pour the mixture into the prepared casserole dish and smooth the top.
- Sprinkle breadcrumbs over the top, if using.
- Bake for 30–40 minutes until golden brown and bubbly.
- Let cool for 10 minutes before serving. Enjoy!
Notes
For extra flavor, add a pinch of red pepper flakes or swap cheddar for mozzarella. This dish can also be made ahead and reheated.
