Description

Savory, crispy zucchini and cheese crisps—easy to make with just a few ingredients and optional seasonings. Perfect as a low-carb snack or appetizer.

Ingredients

Scale
  • 1 cup finely grated zucchini
  • 1 cup grated hard cheese (Parmesan, Gruyère, or Cheddar)
  • Optional seasonings: Garlic powder, onion powder, paprika, dried herbs (oregano, thyme, rosemary)

Instructions

  1. Grate the Zucchini: Place grated zucchini in a cheesecloth or towel and squeeze out all excess moisture.
  2. Mix: In a bowl, combine grated zucchini and cheese. Add optional seasonings if desired.
  3. Prepare the Baking Sheet: Line a baking tray with parchment paper. Scoop 1-tablespoon portions of the mixture and flatten slightly. Space them out well.
  4. Bake: Place under the broiler in the upper third of the oven. Broil on low until the edges turn golden brown.
  5. Cool: Let cool for 1–2 minutes, then transfer to a paper-towel-lined plate to absorb excess fat and crisp up.

Notes

Store in an airtight container for up to 2 days. Re-crisp in the oven if needed. Use dairy-free cheese for a vegan version.
