- 1 heaping cup diced English cucumber
- ¼ cup thinly sliced red onion
- ⅓ cup crumbled feta cheese
- 1 avocado, cubed
- ⅓ cup torn fresh mint or basil leaves
- ½ serrano or jalapeño pepper, thinly sliced (optional)
- Sea salt to taste
- For the dressing:
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons fresh lime juice
- ½ garlic clove, minced
- ¼ teaspoon sea salt
Instructions
- Make the dressing: In a small bowl, whisk together the olive oil, lime juice, minced garlic, and sea salt until emulsified.
- Assemble the salad: On a large platter or in a bowl, layer the cubed watermelon, cucumber, and red onion.
- Add toppings: Drizzle half the dressing over the layered ingredients. Top with crumbled feta, avocado cubes, fresh mint or basil, and optional chili pepper.
- Finish and serve: Drizzle the remaining dressing over the salad, season with a light pinch of sea salt, and serve immediately.
