  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • 2 tbsp maple syrup or sugar
  • 1¼ cups flour
  • ¾ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¾ cup melted butter
  • 1 cup oats (optional)

Instructions

  1. Preheat the oven to 350°F (180°C). Grease an 8×8-inch baking pan.
  2. In a small saucepan, combine raspberries, lemon juice, sugar (or maple syrup), and cornstarch. Heat over medium until the mixture thickens slightly, about 5–7 minutes.
  3. In a large mixing bowl, combine flour, oats (if using), brown sugar, cinnamon, and salt. Stir in the melted butter until a crumbly mixture forms.
  4. Press two-thirds of the crumble mixture firmly into the bottom of the prepared pan to form the crust.
  5. Spread the raspberry filling evenly over the crust.
  6. Sprinkle the remaining crumble mixture over the top.
  7. Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbly.
  8. Let cool completely before cutting into bars and serving.

Notes

You can substitute raspberries with blueberries, blackberries, or mixed berries. Store leftovers in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
