Description
These raspberry crumble bars are a simple and delicious dessert with a buttery oat crumble and a tangy-sweet raspberry filling. Perfect for snacking, potlucks, or a light fruity treat with coffee or tea.

- 2 cups raspberries (fresh or frozen)
- 1 tbsp lemon juice
- 2 tsp cornstarch
- 2 tbsp maple syrup or sugar
- 1¼ cups flour
- ¾ cup brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- ¾ cup melted butter
- 1 cup oats (optional)
Instructions
- Preheat the oven to 350°F (180°C). Grease an 8×8-inch baking pan.
- In a small saucepan, combine raspberries, lemon juice, sugar (or maple syrup), and cornstarch. Heat over medium until the mixture thickens slightly, about 5–7 minutes.
- In a large mixing bowl, combine flour, oats (if using), brown sugar, cinnamon, and salt. Stir in the melted butter until a crumbly mixture forms.
- Press two-thirds of the crumble mixture firmly into the bottom of the prepared pan to form the crust.
- Spread the raspberry filling evenly over the crust.
- Sprinkle the remaining crumble mixture over the top.
- Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbly.
- Let cool completely before cutting into bars and serving.
Notes
You can substitute raspberries with blueberries, blackberries, or mixed berries. Store leftovers in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
