- 1 head broccoli, cut into florets
- 4 carrots, peeled and sliced
- 2 zucchini, thickly sliced
- 2 potatoes, cubed
- 1 onion, chopped
- ¼ cup olive oil
- 1 packet dry onion soup mix
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking dish.
- Combine all vegetables in the dish.
- Drizzle with olive oil and sprinkle the dry soup mix.
- Toss everything to coat evenly.
- Cover with foil for a softer texture (optional).
- Bake for 35–45 minutes, stirring once halfway.
- Optional: Add grated cheese or breadcrumbs during the last 10 minutes for a golden top.

This bake works great with seasonal vegetables—swap in squash, mushrooms, or bell peppers depending on what you have on hand.
