Description

A fresh and vibrant fruit pizza made with a soft sugar cookie crust, a smooth cream cheese frosting, and a colorful assortment of sliced fruits. It’s the perfect dessert for spring and summer gatherings.

Ingredients

Scale
  • For the Sugar Cookie Crust:
  • 1½ cups all-purpose flour
  • 1½ teaspoons cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (8 tbsp) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Frosting:
  • 8 oz full-fat brick-style cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 1¼ cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • For the Topping (about 3 cups):
  • Strawberries, sliced
  • Blueberries
  • Kiwi, peeled and sliced
  • Mango, sliced
  • Grapes, halved
  • Optional: A splash of lemon juice to prevent browning

Instructions

  1. Make the Sugar Cookie Crust: In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. In another bowl, cream the butter and sugar until light and fluffy. Add egg and vanilla and beat to combine. Slowly mix in the dry ingredients until a soft dough forms. Chill the dough for 20 minutes.
  2. Press the chilled dough evenly into a greased 12-inch pizza pan. Bake at 350°F (177°C) for 17–19 minutes or until lightly golden. Let the crust cool completely.
  3. Make the Frosting: Beat softened cream cheese and butter together until smooth. Add confectioners’ sugar and vanilla extract and beat until light and creamy. Spread evenly over the cooled crust.
  4. Add the Fruit: Wash, dry, and slice fruit. Arrange in decorative rows, concentric circles, or your desired pattern on top of the frosting. Serve immediately or refrigerate until ready to enjoy.

Notes

  • To avoid soggy crust, assemble just before serving or keep fruit and frosting separate until close to serving time.
  • Use lemon juice on fruit like bananas or apples to prevent browning.
  • Store leftovers in the fridge in an airtight container for up to 2 days.
