- 1¾ cups shredded Cheddar cheese
- 1 cup mayonnaise (or ¾ cup for lighter version)
- 3 tbsp chopped fresh parsley (divided)
- 2 tbsp chopped basil
- 2 tbsp chopped oregano
- 1 cup crushed Ritz crackers (about 20 crackers)
- 3 tbsp butter (divided)
- 1 tbsp olive oil
- ½ tsp black pepper
Instructions
- Prep Tomatoes: Slice tomatoes and drain them on paper towels for 30 minutes to remove excess moisture.
- Bake Crust: Preheat oven to 400°F (200°C). Prick the crust with a fork and prebake for 18–20 minutes until golden. Let cool slightly.
- Caramelize Onions: Sauté onions in 1 tbsp butter and olive oil over medium-low heat for about 20 minutes until soft and golden. Let cool, then chop.
- Make Filling: In a bowl, combine chopped onions, crumbled bacon, ½ cup Parmesan, shredded Cheddar, mayonnaise, 2 tbsp parsley, basil, oregano, and black pepper.
- Assemble Pie: In the baked crust, layer half of the drained tomatoes. Spread half of the filling mixture on top. Repeat with remaining tomatoes and filling.
- Prepare Topping: Mix crushed Ritz crackers with melted butter (2 tbsp), remaining ½ cup Parmesan, and 1 tbsp chopped parsley.
- Bake: Sprinkle the topping evenly over the pie. Bake at 400°F for 15 minutes until the top is golden and bubbly. Let cool slightly before slicing.
Notes
For best results, use ripe but firm tomatoes and drain them well to prevent sogginess. This pie is rich, so serve with a crisp green salad or chilled soup for a balanced meal.
