Ingredients
- 1 pre-baked pie crust (9-inch)
- 3–4 ripe tomatoes, sliced and drained
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- Salt, pepper, and optional garlic (to taste)
Instructions
- Preheat oven: Preheat to 375°F (190°C).
- Prepare tomatoes: Slice tomatoes and lay them on paper towels to drain moisture. Lightly salt if desired and let sit for 10–15 minutes.
- Make topping: In a bowl, mix shredded cheddar cheese, mayonnaise, grated Parmesan, chopped basil, salt, pepper, and garlic (if using).
- Assemble pie: Layer the sliced tomatoes evenly in the pre-baked crust. Spread the cheese-mayo mixture over the tomatoes.
- Bake: Bake for 30–35 minutes, or until the top is golden brown and bubbly.
- Cool and serve: Let cool slightly before slicing. Serve warm or at room temperature.
Notes
To avoid a soggy pie, make sure to drain the tomatoes well. You can use a mix of cheeses like mozzarella or Gruyère for extra flavor.
